4 c peeled, cubed potatoes
8 oz. creamed cottage cheese
8 oz. sour cream
1/2 c sliced green onion
1 T chopped parsley
1 clove of garlic, minced
1/2 tsp salt
1/2 c shredded Cheddar
Recipe
Cook potatoes in boiling water till tender. Drain. Combine remaining
ingredients, except cheese. Carefully stir in potatoes. Spoon into lightly
greased casserole dish. Bake at 350 for 25 min. Top with cheese. Sprinkle
with a little paprika if desired. Bake 5 min. more, until cheese melts.
