    Potato Casserole

    List of Ingredients




    Yield: 8 Servings
    1/2 Stick margarine
    1 c Low fat Sour Cream
    1 cn Mushroom soup
    1/3 c Sauteed onions
    2 T Chives, chopped
    6 md Potatoes, peeled and cut up
    1/2 c Cheddar or Monterey Jack

    Recipe



    Peel and cut up potatoes. Boil in lightly salted (1/2 tsp) water til
    just tender, about 15 minutes. Drain potatoes and set aside. Melt
    margarine and pour into 2 quart casserole dish. Combine potatoes, sour
    cream, mushroom soup, onions, and chives and cheese; place in casserole
    dish. Bake at 350 degrees lightly browned, about 20 minutes.
    Yields: 8 servings
