Chicken Chili
List of Ingredients
1 medium size whole chicken
1 large bell pepper
1 large onion
1 pkg. chili seasoning spices
1 can chili beans
1 can kidney beans
1 can pinto beans
15 oz. can diced tomatoes
15 oz. can tomato sauce (Hunts with chili seasonings if you can find it)
1 can Diet Coke (secret ingredient)
Recipe
Boil chicken in a pot of water until tender. Save the chicken stock for
something else. Bone chicken, shredding it well. Dice bell pepper and
onion and saute in a bit of olive oil until soft.
Add chili spice mix and heat a few more minutes, stirring constantly, to
toast the spices. In a large pot, combine shredded chicken, pepper and
onion mixture, and cans of beans, tomatoes, and
sauce. Mix well. Cook over medium heat for about 5 minutes.
Add the secret ingredient (the Diet Coke) and cook over medium heat for
another 20 minutes, stirring occasionally. Makes about 4 quarts, and
reheats well.
