    Creamy Chicken and Mushrooms

    List of Ingredients






    2 cups uncooked medium egg noodles
    1/2 cup dry white wine
    1 cup fat-free milk
    Cooking spray
    2 tsp. all-purpose flour
    1 lb. skinless, boneless chicken breast
    1/3 cup spreadable cheese with garlic and herbs
    1 tsp. olive oil
    2 Tbsp. fresh parsley
    1/2 cup shallots
    1/4 tsp. black pepper
    8 oz. sliced mushrooms
    Additional fresh parsley, optional

    Recipe



    Cook pasta according to package directions, omitting salt and fat.
    While pasta cooks, heat large nonstick skillet coated with cooking
    spray over medium-high heat. Add chicken (cut into bite-size pieces),
    saute 4 minutes, or until done. Remove chicken from pan; set aside.
    Heat oil in pan over medium-high heat. Add shallots (peeled and
    chopped); saute 1 minute. Add mushrooms; saute 4 minutes. Add wine;
    cook 3 minutes, or until liquid almost evaporates. In small bowl,
    combine milk and flour; stir well with whisk. Add milk mixture to
    pan; cook 3 minutes or until slightly thick. Add chicken, cheese, 2
    tablespoons chopped parsley and freshly ground pepper. Reduce heat;
    simmer 3 minutes or until thoroughly heated. Serve over pasta;
    sprinkle with additional chopped parsley, if desired. Makes 4
    servings (serving size 3/4 cup chicken mixture and 3/4 cup pasta).

    April 26 Food section.

    NUTRITIONAL ANALYSIS (per serving): 338 calories (18 percent from
    fat), 6.9 grams total fat (2.5 grams saturated fat), 37.1 grams
    protein, 31.3 grams carbohydrates, 2.9 grams fiber, 101 mg.
    cholesterol, 241 mg. sodium
