Italian Lemon Chicken
List of Ingredients
1/4 c. olive oil
4 garlic cloves, chopped
4-6 boneless chicken breasts
1/2 c. seasoned Italian-style bread crumbs
salt and pepper to taste
1/4 c. chopped fresh Italian parsley
1/2 c. dry white wine
juice of one lemon
Recipe
Place chicken breasts in a plastic bag with the bread crumbs and close
tightly. Shake until all of the chicken breasts are evenly coated. Set
aside.
Heat olive oil on medium heat in a skillet, add chopped garlic, saute until
soft. Add the coated chicken breasts, add salt and pepper to taste. Brown
the chicken breasts on both sides to a golden brown. Turn the heat down to
a simmer and add parsley, wine, lemon juice. Cover the skillet and cook for
15- 20 minutes. Transfer to a heated serving platter and top with lemon
slices. Serves 4-6
