2 Chicken breasts cut in Cubes
2 Limes juice of
2 cl Garlic minced
1 tb Low sodium soy sauce
1 tb Apple juice concentrate
8 oz Medium mushrooms
1 Red bell pepper cut in 1" Cubes
16 White pearl onions
1 Green bell pepper cut in 1" Pieces
2 sm Zucchini cubed
Recipe
Combine lime juice garlic soy sauce and apple juice and marinate the chicken in the refrigerator at least 2 hours turning occasionally. Alternate chicken and vegetables on skewers. Grill or broil about 10 minutes turning and basting with marinade. Serves 4.
