Roasted Parmesan Chicken
List of Ingredients
3 1/2 lb (1.6kg) Fresh Whole Chicken
1 C (250ml) Mayonnaise
1/2 C (125ml) Grated Parmesan Cheese
1 teaspoon Crushed Dried Oregano
1 teaspoon Garlic Powder
1/2 teaspoon Salt
1/4 teaspoon Ground Black Pepper
Recipe
Preheat oven to 375F (190C).
Remove the neck and giblets from the whole chicken
and rinse the chicken with water. Pat dry.
In a small bowl, combine the mayonnaise, Parmesan
cheese, oregano, garlic powder, salt and pepper.
Coat chicken thoroughly with mixture.
Place the chicken a shallow roasting pan and
bake in top third of oven for 1 to 1 1/4 hours or
until the chicken is done and juices run clear.
Before carving let the chicken rest for 5 to 10
minutes.
Preparation Time: 10 minutes
Cooking Time: 1 hour 15 minutes
