Sauteed Chicken Chunks With Onions

2 tablespoons extra-virgin olive oil
2 tablespoons butter (or use all oil)
1 large onion, peeled and sliced
1 pound boneless, skinless chicken breasts, cut in 1/2-inch to 1-inch dice
1/4 cup torn parsley leaves

Makes 4 servings
Put oil and butter in a large skillet; turn heat to medium-high. When
the butter melts, add the onion and turn the heat to high. Cook,
stirring frequently but not constantly, until the onion is brown and
crisp (be careful it doesn't burn), about 10 minutes. Remove with
slotted spoon and set aside.
Season chicken well with salt and pepper. Add the chicken to skillet;
brown well on all sides, a total of about 5 minutes. Return the
onions to the pan, along with 1/2 cup water, and cook, stirring,
until saucy. Stir in the parsley and serve.
Per serving (based on using 2 tablespoons butter): 252 calories,
(percent of calories from fat, 54), 24 grams protein, 5 grams
