    2 cups crushed cornflakes
    3/4 cup grated Parmesan cheese
    1 (.4-ounce) envelope ranch salad dressing mix
    6 pieces boneless, skinless chicken breast (about 5 ounces each)
    1/4 cup ( 1/2 stick) butter, melted

    Recipe



    Preheat oven to 400 degrees. Spray a 9-by-13-inch baking dish with
    vegetable oil spray.

    In a shallow dish or pan, stir together the cornflakes, Parmesan
    cheese and ranch dressing. Dip chicken in the melted butter and
    dredge through the cornflake mixture. Place the chicken pieces in the
    prepared dish, reduce oven temperature to 375 degrees and bake for 20
    minutes or until the coating is crisp and the chicken is cooked
    through. Makes 6 servings

    Per serving: 318 calories (percent of calories from fat, 14), 33
    grams protein, 13 grams carbohydrates, trace fiber, 13 grams fat, 106
    milligrams cholesterol, 1,294 milligrams sodium.
