8 boneless chicken breast halves
8 slices Mozzarella cheese
butter
salt and pepper
flour
beaten egg
breadcrumbs
Sauce:
1/2 c. butter
1 T. chopped fresh parsley
1/4 tsp. sage
1/4 tsp. rosemary
1/4 tsp. thyme
1/4 - 1/2 c. sherry
Recipe
Pound chicken breasts flat; coat generously with butter, salt and pepper. Roll each chicken breast inside a slice of cheese (that's correct! The cheese is on the outside...) dip the rolls in flour, beaten egg and then breadcrumbs. Place in baking pan, single layer.
Melt butter with herbs. Pour sauce over chicken rolls. Bake, uncovered, at 350F., 30 minutes. Add sherry; bake 30 more minutes. Serves 4-6.
