Tetrazzini with a Twist
List of Ingredients
3 1/2 c Smoked turkey, cut into bite
-sized pieces
1 c Parmesan cheese, low fat
1 cn Chilis, chopped
1/4 c Onion, chopped
1 lb Mushrooms, sliced(4 sm cans)
3 T Butter
3 T Flour
1 c Fat free Half-n-Half
2 c Fat free chicken broth
1/2 ts Pepper, freshly ground
1 lb Angel hair pasta
Recipe
Chop smoked turkey into bite size pieces and set
aside. Saute sliced mushrooms and chopped onion until
soft, about 3 minutes. In a large pasta bowl, combine
mushrooms, onions, chilis and 1/3 cup of the parmesan.
Toss to coat; set aside.
Bring 2 quarts water to a rolling boil and add
pasta. Cook to el dente stage, drain, set aside. In a
saucepan, melt butter, then add flour and blend well.
Slowly add broth and half-n-half to the butter-flour
mixture and heat, stirring constantly. Add 1/3 cup
parmesan and black pepper; continue to heat and stir
until sauce thickens. Remove from heat.
Add pasta and sauce to turkey/mushroom mixture
and mix gently. Spray a 13 x 9 x 2 baking dish with
olive oil and pour the tetrazzini into the dish. Top
with the final 1/3 cup of parmesan, and bake at
350-degrees for 30 minutes or until bubbly.
