August Moon Fried Rice

List of Ingredients
2 T. vegetable oil
1 lg. carrot, sliced
1/2 green pepper, sliced
1 stalk celery, sliced
1 lb. tender green beans, sliced
1 bunch green onions, sliced (greens also)
4 c. cooked rice
1 1/2 c. cooked chicken, beef or pork
1/4 c. good soy sauce
1 egg
salt, pepper, garlic powder to taste
Recipe
Heat oil in large skillet. Add vegetables and stir fry about 3 minutes. Reduce heat, stir in rice. Add meat, seasonings, soy sauce; mix until blended.
In separate pan, fry egg as for an omelet. Slice in thin strips and sprinkle on rice. Keep over low heat until ready to serve.
Serves 6.
