    Yellow Rice Mix

    posted by femme 650 on Family Fare / Mr Food's NOTE: Traditionally, saffron is used to color and flavor Mexican rice, but I don't always have it on hand and, besides, it's really expensive. So I decided to replace it with turmeric, and you know what? It tastes just as good! / This one is sort of like the Mahatma's Yellow rice mix. Not quite a clone, but really close.



    List of Ingredients






    For the Mix:

    1 Cup Rice
    1 Teaspoon Onion Powder
    1/4 Teaspoon Ground Turmeric
    1/4 Teaspoon Ground Cumin
    1/2 Teaspoon Salt
    1/4 Teaspoon Garlic Powder
    1/4 Teaspoon Sugar


    For making the Rice:
    2 Cups Water
    2 Teaspoons Olive Oil

    Recipe



    Mix: Combine the spices and the rice. Store in an airtight container.

    To make the Rice: In a medium sized saucepan, combine the rice mix,
    water and oil and bring to a boil over high heat, stirring constantly.
    Reduce the heat to low, cover, and simmer for 20 minutes, or until the
    rice is tender and the liquid is absorbed. Remove from the heat and let
    sit for 5 minutes. Stir the rice and serve.
