    Bow-Tie Chicken Salad

    List of Ingredients






    1 slightly beaten egg
    1/2 cup orange juice
    1/4 cup honey
    3 tablespoons lemon juice
    2 ounces bow tie or wagon-wheel-shaped pasta
    1 cantaloupe, seeded
    2 cups cubed, cooked chicken or turkey
    1 cup seedless grapes, halved
    1/2 cup sliced celery
    1/2 cup coarsely chopped walnuts
    Lettuce leaves

    Recipe



    For dressing: Combine egg, orange juice, honey and lemon juice in
    small saucepan. Cook and stir until slightly thickened and just
    bubbly. Cool slightly. (Dressing will be thin.)
    Cook pasta in boiling salted water until tender (according to
    package directions). Do not overcook! Drain well.
    Cut 4 1/2-inch thick rings from center of melon, peel and seed.
    Wrap in plastic wrap and refrigerate. Cube remaining cantaloupe to
    equal 2 cups. In a large bowl, combine the cubed cantaloupe, chicken,
    grapes, celery, nuts, pasta and dressing. Cover and chill for 2 to 24
    hours.
    To serve, arrange plates dressed with lettuce, place melon rings
    on top. Spoon chicken-pasta mixture over the rings. Serves 4.
