Barbecued Pork Sandwiches
List of Ingredients
2 boneless pork loin roasts, (2 1/2 to 3 lb. each)
1 c. water
2 tsp. salt
2 c. ketchup
2 c. diced celery
1/3 c. steak sauce (like A-1)
1/4 c. packed brown sugar
1/4 c. vinegar
2 tsp. lemon juice
20-25 hamburger buns
Recipe
Place roasts in an 8-quart Dutch oven; add water and salt. Cover and cook on medium-low heat for 21/2 hours or until meat is tender. Remove roasts and shred with a fork; set aside. Skim off fat and discard. Drain all but 1 c. cooking liquid. Add meat, catsup, celery, steak sauce, brown sugar, vinegar and lemon juice. Cover and cook over medium-low heat for 1 1/2 hours. Serve on buns.
Serves 20-25
If you want a Southern style sandwich, add a few tsp. of cole slaw on each sandwich, made with a vinegar-sugar-type dressing, not a creamy one.
