2 T. butter
1/4 c. chopped onion
1/2 c. thinly sliced celery
2 T. flour
1/4 tsp. pepper
1/4 tsp. ground mustard (dry)
1 c. milk
1 1/2 c. beer
2 c. shredded Cheddar Cheese,
Paprika
Recipe
Melt butter in 2-qt. saucepan over medium heat. Cook onion and celery in butter about 2 minutes, stirring occasionally, until tender. Stir in flour, pepper and mustard. Stir in milk and beer. Heat to boiling over med. heat, stir constantly. Boil and stir 1 minute. Stir in cheese. Heat over low heat, stir just until cheese is melted. Sprinkle with paprika.
Note: You can substitute a 10 1/2 oz. can of condensed chicken broth for the beer.
