    Chicken Soup with Cheese and Broccoli

    List of Ingredients




    1/2 c. butter
    1 c. flour
    8 c. water
    4 c. chicken broth
    2 cubes chicken bouillon or 2 tsp. chicken granules
    2 lb. boneless skinless chicken breast(lightly fry til pinkness is gone)
    2 heads of broccoli(or 2 bags fresh frozen)
    1 1/2 tsp. salt
    1 tsp. black pepper
    1 c. light cream(half and half works also)
    3 c. shredded Cheddar cheese (or velveeta cut small)

    Recipe



    In a 5 qt. pot, melt butter over medium heat. Add flour,stirring constantly
    until a paste forms. Remove from pot and set aside.

    In the same pot, combine water, broth, bouillon cubes, chicken, broccoli,
    salt and pepper. Bring to a boil. Reduce heat to a simmer. Simmmer for 45
    minutes or until broccoli is tender. Stir in the flour paste a little at a
    time until soup thickens. Simmer for 5 minutes.

    Reduce heat and stir in cream. Mix well; add shredded cheese, a cup at a
    time, stirring well.
