    Creamy Tomato Soup

    List of Ingredients




    2 T. finely chopped onion
    3 T. butter or margarine
    1 1/2 lb. ripe tomatoes
    1/4 c. water
    1 T. minced fresh basil
    1 T. sugar
    2 T. flour
    1/2 tsp. salt
    1/4 tsp. white pepper
    2 c. milk

    Recipe



    In microwave-safe bowl, combine onion with 1 T. butter. Microwave on high 2 minutes or until onion has softened. Peel, seed and chop tomatoes. Reserve 1/4 c. for garnish. Add remaining tomatoes to onion mixture with water, basil and sugar. Stir and microwave on high 4-5 minutes until tomatoes are softened, stirring once more.

    In 2 qt. bowl, microwave 2 T. butter on high 30 seconds. Whisk in flour, salt and pepper. Stir in milk. Microwave on high 4 - 5 minutes or until thickened, stirring frequently. In food processor or blender process tomato mixture slowly, pouring in milk mixture. Garnish with reserved chopped tomato and serve hot or chilled. Makes 4 servings
