    Spaetzle and Stew

    List of Ingredients






    3 c. flour plus 3 T. flour
    2 eggs
    1 tsp. salt
    about 1 c. water
    2 lb. cubed veal or beef
    carrots, beans, other vegetables - your choice

    Recipe



    Stew: Sauté meat. Add enough water to cover meat. In another pan, brown 3 T. flour. This will take about 5 minutes and must be watched carefully and stirred constantly. Add browned flour to the meat, stir until thickened. Vegetables may be added (takes about 2 c. carrots, for example.)

    Cook until vegetables are soft. Add dumplings and cook about 20 more minutes.

    Spaetzle: combine flour, eggs and salt with enough water to make a soft dough. Force the dough through a colander into a kettle of boiling water. OR place dough on a cutting board and slice the dough. Cook for 5 minutes or until they rise to the surface. Drain well, if you're making the stew, and place in a bowl. Set aside until ready to add to stew.
