    List of Ingredients




    4-5 potatoes (peeled and chopped)
    2 carrots (peeled and chopped)
    4 green onions (chopped)
    1 white onion (chopped)
    1-2 celery stalks (chopped)
    1 garlic clove (crushed)
    2 tbsp butter
    4 cups of chicken or vegetable broth
    1 tbsp basil
    salt and pepper to taste
    2 tbsp sour cream




    Recipe



    Put all ingredients into a large pot and bring to a boil. Reduce heat
    to low and simmer until potatoes and carrots are soft.

    Mash soup mixture until creamy and serve. Garnish with a dollop of
    sour cream and freshly chopped chives.

    Tip: To speed up the soup preparation, cook the potatoes and carrots
    in to microwave before adding to the soup mixture.
