Creamy Pumpkin Pie
My Aunt Minne Rush always had the best pumpkin pie at Thanksgiving. Her is her recipe to share. The pie crust recipe is attached.
List of Ingredients
- 2 cups or 1 (No.303) can pumpkin, (not pie filling)
- 2/3 cup firmly packed dark brown sugar
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ginger
- 1/4 teaspoon cloves
- 3 eggs, slightly beaten
- 1 tall can (13 1/2 oz) evaporated milk
- 1/4 cup heavy cream
Instructions
- Combine the pumpkin, brown sugar, salt, cinnamon, nutmeg, ginger, cloves and eggs. Mix well
- Gradually stir in the evaporated milk and heavy cream.
- Stir until well blended. Gently ladle mixture into the chilled pie shell (recipe follows)
- Bake in a 450 degree F. oven for 10 minutes, then reduce the heat to 350 and bake for 30 minutes or until a knife inserted in the center comes out clean.
Final Comments
This is a great pie. Don't forget the whipped cream on the top!
