Pineapple Drop Cookies

Recipe Introduction
I always loved these cookies. There aren't too many made with pineaapple.
List of Ingredients
- 1/2 c. shortening
- 3/4 c. sugar
- 2 eggs
- 1 c. crushed pineapple, well drained
- 2 c. flour
- 2 tsp baking powder
- 1/4 t.sp each of salt & soda
- 1/2 c. chopped nuts
Instructions
- Cream shortening & sugar,
- Add eggs one at a time beating after each.
- Add pineapple.
- Sift dry ingredients together & stir into creamed mixture.
- Add nuts.
- Drop from tsp onto greased cookie sheet.
- Bake about 8-10 minutes in 350 - 375 degree oven.
- 3-1/2 doz.
- Ice with Browned Butter frosting.
Final Comments
Marian usually baked with butter and served oleo(margarnie) at meals. My Mom served butter at the table and baked with shortening. I'm not sure why she wrote "shortening" here. It could be that this was originally my Mom's recipe as I think she used to make it, too. I have copied this recipe exactly as Marian wrote it out on a now brown or yellow recipe card.
