ICING FOR CARAMEL CAKE
List of Ingredients
- 7 CUPS SUGAR
- 1 CUP CHOPPED PECANS
- 1 1/2 CUPS MILK
- VANILLA
- BUTTER
Instructions
- MIX 6 CUPS SUGAR WITH MILK AND COOK OVER DIRECT HEAT. WHILE THIS MIXTURE IS COOKING, SLOWLY BROWN 1 CUP SUGAR. LET FIRST MIXTURE COME TO A BOIL AND SET OFF STOVE. ADD BROWNED SUGAR. THEN RETURN TO HEAT AND COOK UNTIL IT FORMS A SOFT BALL IN WATER OR 232 DEGREES. REMOVE AND ADD A LUMP OF BUTTER(1 1/3 STICKS) AND 1 TSP. VANILLA. BEAT UNTIL CREAMY AND COOL ENOUGH TO SPREAD ON LAYERS. IF IT GETS TOO STIFF, ADD CREAM AND BEAT.
