    Frosting for carrot cake


    List of Ingredients


    • 1 C coconut milk
    • 1/2 C coconut nectar or honey
    • Dash of salt
    • 2 T arrowroot or cornstarch
    • 2 T water
    • 1 1/4 C melted coconut oil


    Instructions


    1. Heat coconut milk, nectar and salt. Simmer on lower heat for 15 minutes, stirring often.
    2. Add arrowroot paste and mix well until it is thickened, about a minute .
    3. Put mixture into mixing bowl and add oil slowly and mix well until it is thoroughly blended.
    4. Cover bowl and put into freezer for 30 to 45 minutes until starting to turn white.
    5. Beat until smooth.
