Frosting for carrot cake
List of Ingredients
- 1 C coconut milk
- 1/2 C coconut nectar or honey
- Dash of salt
- 2 T arrowroot or cornstarch
- 2 T water
- 1 1/4 C melted coconut oil
Instructions
- Heat coconut milk, nectar and salt. Simmer on lower heat for 15 minutes, stirring often.
- Add arrowroot paste and mix well until it is thickened, about a minute .
- Put mixture into mixing bowl and add oil slowly and mix well until it is thoroughly blended.
- Cover bowl and put into freezer for 30 to 45 minutes until starting to turn white.
- Beat until smooth.
