Sesame Chicken Fingers on Soba Noodles

- 2 tablespoon Dijon mustard
- 1 1/2 pounds chicken, tenders
- 1/3 cup sesame seeds
- 3 tablespoons all purpose flour
- pepper to taste
- 6 tablespoons canola oil
- 1 lemon for serving
Instructions
- Place the mustard in a small bowl. Lay the chicken tenders side by side on a cutting board. Brush with mustard on both sides.
- Heat a heavy large skillet over medium-high heat.
- On a plate, combine the sesame seeds and flour and season with pepper. When the pan is hot add 3 tablespoons canola oil to it. Add more oil as needed.
- Dip the mustard-brushed tenders in the sesame-flour mixture. Shake off excess. When the oil is hot, add some of the tenders to the pan in a single layer and cook until golden about 3-4 minutes. Turn and cook the second side in the same manner, until cooked through. With a spatula or tongs, remove the pieces to a large plate.
