    Sesame Chicken Fingers on Soba Noodles

    • 2 tablespoon Dijon mustard
    • 1 1/2 pounds chicken, tenders
    • 1/3 cup sesame seeds
    • 3 tablespoons all purpose flour
    • pepper to taste
    • 6 tablespoons canola oil
    • 1 lemon for serving


    Instructions


    1. Place the mustard in a small bowl. Lay the chicken tenders side by side on a cutting board. Brush with mustard on both sides.

    2. Heat a heavy large skillet over medium-high heat.

    3. On a plate, combine the sesame seeds and flour and season with pepper. When the pan is hot add 3 tablespoons canola oil to it. Add more oil as needed.

    4. Dip the mustard-brushed tenders in the sesame-flour mixture. Shake off excess. When the oil is hot, add some of the tenders to the pan in a single layer and cook until golden about 3-4 minutes. Turn and cook the second side in the same manner, until cooked through. With a spatula or tongs, remove the pieces to a large plate.
