List of Ingredients
- 4 quarts water
- 8 ounces soba noodles (in the oriental food section.)
- 2 tablespoons soy sauce
- 2 tablespoons mirin (or sherry)
- 2 teaspoons toasted sesame oil
Instructions
- Pour the water into a large pot. Cover and bring to a boil over hight heat. Add the noodles and cook according to the package directions until tender, about 7-8 minutes. Drain well,
- Meanwhile in a medium bowl, combine the soy sauce, mirin, and sesame oil.
- Add the drained noodles to the bowl and toss.
- Arrange the noodles on a platter and top with the chicken fingers.
- Cut the lemon into wedges and add to the platter for each diner to squeeze onto his chicken and soba.
Final Comments
Serve with a cucumber salad and green tea ice cream for dessert.
