    Sesame Chicken Fingers on Soba Noodles - part 2

    Recipe Introduction


    The chicken tenders are served on these noodles.


    List of Ingredients


    • 4 quarts water
    • 8 ounces soba noodles (in the oriental food section.)
    • 2 tablespoons soy sauce
    • 2 tablespoons mirin (or sherry)
    • 2 teaspoons toasted sesame oil


    Instructions


    1. Pour the water into a large pot. Cover and bring to a boil over hight heat. Add the noodles and cook according to the package directions until tender, about 7-8 minutes. Drain well,
    2. Meanwhile in a medium bowl, combine the soy sauce, mirin, and sesame oil.
    3. Add the drained noodles to the bowl and toss.
    4. Arrange the noodles on a platter and top with the chicken fingers.
    5. Cut the lemon into wedges and add to the platter for each diner to squeeze onto his chicken and soba.


    Final Comments


    Serve with a cucumber salad and green tea ice cream for dessert.
